Roasted beets and red onions with a touch of rosemary

Rose Mary. If my grand mother had had her way, that’s what you would call me today. But it wasn’t meant to be and here I am, thinking about the aroma of what my name could have been. Instead, I take pleasure in growing green springs of rosemary in my kitchen: not that bad after all. I always use fresh rosemary in my food, I find that the dried one has lost all its glory, don’t you? This time I decided to couple it with some beets and red onions, not by choice, but driven by hunger and the lack of food in my pantry :) It happens sometimes, this busy lifestyle takes its toll and I don’t always get to go grocery shopping, so one gets creative… so there I was, just a girl, 4 small beets, two red onions and a couple of rosemary springs. What was I to do?

Roasted beets and red onions with a touch of rosemary

Ingredients

  • 4 small red beets
  • 2 eggs, whisked
  • 80 g soft cheese (try French soft cheeses, like brie, they're amazing)
  • 2 tbs rosemary leaves plus extra springs for decorating
  • 2 large red onions
  • 2 tbs olive oil
  • optional - handful of walnuts, chopped
TO TRY >  Chicory salad cups

Instructions

  1. Peel the beets and finely grate them. Mix with the eggs, cheese, walnuts and rosemary.
  2. Peel the onions and cut them in large pieces.
  3. Put the beet mixture in an oven ceramic dish, place the onion pieces on top, the rosemary springs and sprinkle with olive oil.
  4. Cover with aluminium foil (or a lid) and bake in preheated oven (220 C) for about 30 minutes or until the beets are cooked through. In the last minutes of baking, remove the foil.

I loved the result, but I must warn you: this is more likely to be served as a side, and not as main dish. If you have friends over, make some salad, some fancy pure, take out the ginger beer from the fridge and impress them with this flavourful dish. I’m sure they won’t forget it anytime soon :)
